General Category : Main Course

Food Group : Meat-Lamb

Preparation Method : Roast

Other Criteria : CL Cooks

Ingredients

•

2 racks of lamb, each about 1-1/2 lb (750g)

•

1/4 cup (50 mL) cumin seeds

•

1/4 cup (50 mL) olive oil

•

2 tbsp (25 mL) minced garlic

•

1/2 tsp (2 mL) salt

•

1/4 tsp (1 mL) pepper

Preparation

If necessary, trim all but 1/8 inch (3 mm) fat from meaty portion of racks. Place each rack, meaty side up, on cutting board. Using sharp paring knife, cut line across rack where meaty portion begins, about 3 inches (8 cm) down from rib ends. Cut off meat and fat between bared ribs to expose bones. Holding each rack firmly, scrape exposed rib bones clean.

In small dry skillet, toast cumin seeds over medium heat, shaking pan often, until fragrant and slightly darkened, about 5 minutes. Let cool. Transfer to spice grinder; grind coarsely. Transfer to bowl and mix in oil, garlic, salt and pepper. (Or, using mortar and pestle, pound seeds coarsely. Add garlic and pound to make thick smooth paste. Gradually blend in oil, then salt and pepper.)

Evenly spread paste over meaty side of racks, pushing some between bones. Spread remaining paste on bone side. Place on greased rack in small roasting pan.
(Make-ahead: Cover and refrigerate for up to 1 day. Let come to room temperature before roasting.)

Roast in 400°F (200°C) oven until lamb is crusty and browned and meat thermometer registers 140°F (60°C) for rare, about 30 minutes, or to desired doneness.

Transfer to carving board; tent with foil and let stand for 5 minutes. Cut between bones to serve.

Clam Chowder

The chowder can be made a day or two in advance and reheated prior to serving. Its flavour actually benefits from resting overnight.

8 slices of bacon, chopped
1 medium cooking onion, chopped
2 celery stalks, diced
1/2 cup of chardonnay or other white wine( have have used apple juice instead and it taste the same)
1 cup of cream
1 cup of milk
2 five-ounce cans of clam meat
2 large bay leafs
1 teaspoon of fresh thyme leaves
1 cup of grated baking potato
1 can of unsweetened evaporated milk
1/4 cup of chopped flat leaf parsley
Salt and pepper

Brown the bacon until crisp in a thick-bottomed soup pot. Pour off half of the fat. Add the onions and celery with a splash of water and sauté for a few minutes until soft.
Add the white wine, cream, milk and the juice from the clams (reserve the actual clams for the end so they don’t toughen). Add the bay leaf, thyme and grated potato; bring the mixture to a slow simmer. Continue simmering for fifteen minutes until the grated potato softens, releasing its starches and thickening the chowder base.
Add the reserved clam meat, evaporated milk and parsley. Bring back to heat. Taste the chowder and add enough salt and pepper to season it. Serve immediately with your favourite biscuits!

Super good!
